Everyone loves to make an apricot crumble. It is sweet and slightly tart in the middle with a beautiful crumble on the top. You can do just about anything that you want with it.
Apricot is best when in season but this doesn’t mean that you can’t use apricot from a tin in the winter.
In desserts apricot can be used just the same as apples. They have the same uses in that they can be stewed, put in pies, cakes, crumbles and other dishes.
Of all the desserts that you can do with apricot, crumble would have to be my favourite. It melts in your mouth when eaten straight out of the oven and is perfect on a cold winter night to give you a nice warm belly with a full and satisfied feeling.
Apricot crumble is best served with cream, ice cream or custard. By themselves or all together it really works. It is a great dish if you want to impress friends with your cooking ability.
Below is a recipe for my favourite apricot crumble. It really is to die for.
Ingredients
- ¼ cup orange juice
- 50ml Grand Marnier
- 6 Shortbread biscuits
- 1 tin of pie apricot
- 2tsp cinnamon sugar
- ½ cup plain flour
- 30g butter softened
- ¼ cup brown sugar
- 2tsp cinnamon
Method
Preheat oven to 180 Degrees Celsius and grease a baking dish.
Place the orange juice in a frying pan and heat until it reaches a simmer. Then add the Grand Marnier and heat for 3 minutes. Then place the shortbread in with the liquid and let soak until there is no more liquid. Set aside.
To make the crumble topping, place the flour and the butter in a bowl. Rub together with your fingers until it resembles bread crumbs. Add the brown sugar and cinnamon and mix in thoroughly. Set aside.
For the apricot, place into a bowl with the cinnamon sugar. Mix until combined. Set aside.
To construct the crumble. Place the soaked shortbread on the bottom of the greased baking dish. Then on top of the shortbread place the apricot mixture and spread to cover the dish. Then on top of the apricot place the crumble topping mix and spread to cover the whole dish.
Place in the oven and bake for 15 minutes. When done take out of the oven and serve.
Apricot crumble is best served straight from the oven, as when it is hot, it will melt in your mouth. Serve with cream, ice cream or custard or all of the above.
As mentioned before this is a great twist on a classic dessert that is both desirable and delicious. You can’t go wrong with this simple Apricot Crumble recipe when you are entertaining guests.
There are many variations on this dessert. It would take too long to mention them all. You can do this with many different fruits such as apple, pear, peach and any berries. I would recommend this to anyone that has a sweet tooth that would like a hearty warming delicious dessert. My favourite is still apricot crumble.
